Simple Pancake Mix

  • 3 tbls of plain organic flour
  • 1/4 cup of organic milk
  • 1/2 a tbls of raw sugar
  • 1/4 tsp of baking powder
  • 1 small free range egg
  • 3/4 tbls of unsalted butter
  • pinch of sea salt

First sift the plain flour into a mixing bowl with the baking powder, salt and sugar. Place the dry ingredients into the bowl and continue to mix with liquid as you add the milk, beaten egg and melted butter. Mix together until the batter is well combined. Leave the mixture covered in the fridge for a further 15 minutes.

Cook on medium heat on a large pan frying in butter.

Works well with lemons, yogurt ice cream & honey
