At my current part time job here in Australia we make a nice pizza as well and it is similar to the one my first job had on the menu although it has pickled red capsicum and they use red onions. I'm going to go with white onions for this one but if I feel it would be better with red onions I will try that next time, feel free to experiment. I will just use fresh red capsicum as opposed to pickled.
I add ham and chilies although these were not included in the restaurants recipes. Ham gives it some extra protein which I like and the chilies will give it a lot more flavor and depth.
The feta cheese is an important element to this pizza and it really works well with the spinach. I will use baby spinach in this pizza but normal spinach may be even better.
How to Make Pizza Dough
I have put together a basic dough recipe from some lukewarm water, active yeast, flour and a pinch of salt. All you need to do is place some flour around a large plate and make a hole in the middle for the water. You can sieve the flour first if you like too. Pour the water into that and mix a little of the flour from the edge into it slightly. Make sure the water is not too hot or too cold. Now sprinkle some yeast into the water, stir around a little and leave for 5 minutes.
When you come back it should show some signs of activity where the yeast bubbles a little. Sometimes it does not but don't worry, just go ahead and mix it all up and add more flour and water if required. Add some salt and kneed well for about 10- 15 minutes. Roll into a ball, smother lightly with olive oil and place into bowl, cover with cling wrap and leave for at least an hour. If you can leave it for more time as it is apparently better, like 4-5 hours although I have not tried that long myself. If you need exact measurements then you will find plenty of recipes online to help with that.
When you come back you will take the dough and with a little more flour - roll it flat and then cut the pizza shape you want. Place on an oven proof tray that has been lightly coated with olive oil.
You may use anything you like but always consider a pizza as a meal so you should mix ingredients that would go together in a meal.
- Baby Spinach or whole Spinach leaves
- Red or White Onions
- Red & Green Capsicum
- Habanero Chilies
- Ham of the bone
- Danish Feta Cheese
- Mozzarella Cheese
- Extra Virgin Olive Oil
Tomato Pizza Base
Dab the pizza base sauce onto the pizza dough.
Add ingredients in this order while slicing or cutting them before to desired size:
Spinach, ham, feta cheese, capsicum, onions, jalapenos, chilies, mozzarella cheese and sprinkle with olive oil
Season with a little sea salt and ground black pepper
Place into pre-heated oven that is in the mid to hot range.
Cook for about 15 minutes or when it looks ready to taste. Some people prefer well done pizza while others prefer less cooked.
